A total passion for the historic grape variety Completer
"Completer is a wine that inspires strong feelings, it's a grape for real wine lovers."
In 1947 his grandfather pulled up the last vines of this ancient variety, which after that was almost extinct. In 1993, his father Thomas planted Completer again, "and so, with our half-hectare, we're the world's largest Completer producer," jokes Martin. "We've rediscovered this ancient grape and found new ways of working with it." The grapes are harvested late, in November, then aged in barrels. "The small amount of residual sugar nicely balances the fairly high level of acidity which remains even when the grapes are ripe," comment Martin. The result is a mulit-faceted wine with minerality, salinity and power, an elegant freshness - this is a wine that matches perfectly with the tasty local food of canton Grisons, with seafood and mature cheese. "With a Completer, you can always impress a wine lover."
